My good friend Tom Ellis (who’s Lebanese), says our baba ghanouj is better than his grandmother's. Please don’t tell her! We roast the eggplant, we squeeze the lemon juice, we grind the garlic and onions. You reap the reward.

Many people don’t know that all beans and grains contain phytic acid. Phytic acid not only keeps you from absorbing all the minerals in the beans or grains, it does the same for the foods you eat with it. Phytic acid can only be removed by soaking, sprouting or fermenting. No commercial company does that. WE DO. Our garbanzo beans are soaked overnight before cooking. Then we mix in all the fresh ingredients, and finish off with all natural, unsulfured, sun-dried tomatoes.
