When Eliot makes his delicious and healing bone broth, it’s a three-day process. It starts with local, pastured chickens, and chicken feet. The feet are loaded with health-giving gelatin and minerals. This gelatin, which comes from collagen, is rich in protein fragments that are highly bioavailable and believed to help your skin, joint, and hair health especially.
Next day, we skim and save the fat, or schmaltz, because chicken fat is extremely healthy. Then we boil the broth with the cracked bones for another 9 hours. We then refrigerate the broth overnight.
